Bell Pepper Snack Cups

Here’s a really great quick, easy, colorful and fun snack treat for your kids (and you too!).   You’ll need 4 green bell peppers, ½ cup low-fat or fat-free Ranch dressing, 1 red bell pepper, seeded and cut into 4-inches long x 4-inch thick strips, 12 mini carrots, 2 celery stalks, cut into 4-inches long x ½-inch thick strips, 8 asparagus spears, trimmed to 4-5 inches long, and 1 small jicama, peeled and cut into 4-inches long x ½-inch thick strips.  Cut the tops off the green bell peppers and remove the seeds.  Place bell peppers on small plates.  Pour 2 TBS Ranch dressing into the bottom of each snack cup.  Place equal amounts of red pepper strips, mini carrots, celery strips, asparagus spears and jicama strips into each snack cup, then start dipping and snacking.  (Bet your kids will love the jicama … a crunchy, sweet root vegetable!) Mother decided that 10‑year‑old Cathy should get something ‘practical’ for Christmas. "Suppose we open a savings account for you?" mother suggested. Cathy was delighted. "It's your account, darling," mother said as they arrived at the bank, "so you fill out the application." Cathy was doing fine until she came to the space for ‘Name of your former bank.’ After a slight hesitation, she put down ‘Piggy.’
