Here’s a really great quick, easy, colorful and fun snack treat for your kids (and you too!).   You’ll need 4 green bell peppers, ½ cup low-fat or fat-free Ranch dressing, 1 red bell pepper, seeded and cut into 4-inches long x 4-inch thick strips, 12 mini carrots, 2 celery stalks, cut into 4-inches long x ½-inch thick strips, 8 asparagus spears, trimmed to 4-5 inches long, and 1 small jicama, peeled and cut into 4-inches long x ½-inch thick strips.  Cut the tops off the green bell peppers and remove the seeds.  Place bell peppers on small plates.  Pour 2 TBS Ranch dressing into the bottom of each snack cup.  Place equal amounts of red pepper strips, mini carrots, celery strips, asparagus spears and jicama strips into each snack cup, then start dipping and snacking.  (Bet your kids will love the jicama … a crunchy, sweet root vegetable!)
